Dutch Butter Cake

Growing up, when we were expecting company, or visiting someone, my mom always baked a special Dutch treat, Boter Koek. Translated it is 'Butter Cake.' It is such a tasty treat, that is basically a lot of butter and almonds. I thought I'd share the recipe with you today. Usually we end up making a double batch and freeze one or both of the cakes.


Ingredients
1/2 lb. butter
2 eggs
1 1/2 tsp. pure almond extract
2 cup flour
1 1/2 cup sugar
1 1/4 tsp. baking powder
almond slices

Method
Pre-heat oven to 350. Melt butter and mix in eggs and almond extract. In measuring cup, scoop in flour and then on top add baking powder and then mix together.


Mix flour and baking powder in to with wet ingredients and add flour. Mix well with hand whisk.
Grease 8 inch round cake or pie pan.


Spread into pan and sprinkle almond slices on top. Bake for 30 minutes. Let cool and enjoy!
