Hi Y'all! It's Friday! I can't tell you how desperately I need a weekend. This is a special weekend because we're celebrating our Dad's birthday and Father's Day all in one day. The biggest challenge this weekend will be to stay on track with eating healthy. Mr. Firefly and I have have committed to cut out snacking and increase our fruit and veggies.
Look at the beautiful food we have filled our fridge with. I have a lot of different recipes that I am dying to try out.
For breakfast most days I have an egg frittatas with roasted veggies made from these wonderful eggs from my grandparents' hens.
I don't have a recipe for you, but I made them in muffin tins and then froze them. This way I can take one out every morning and not have to worry about them going bad.
