For Father's Day I gave my dad a cookbook filled with recipes that used Coca-Cola. So since I am home this week I got to try out one of the recipes from the cookbook, Fruited Pork Chops.
Ingredients
4 pork chops, 1/2 3/4 inch thick
1 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon ground ginger
1 medium apple
1 medium lemon or orange
2 tablespoons packed brown sugar
1/2 cup Coca-Cola
1 tablespoon cornstarch
Method
Brown pork chops on each side in an un-greased skillet. Lay cops in a shallow baking pan and sprinkle with salt, pepper and ginger.
Core the apple and cut into four thick slices. Cut lemon or orange into four slices and remove seeds. Layer apple and lemon on top of chops.
Sprinkle piles with brown sugar and pour coke around the cops.
Cover tightly and bake in oven at 350 for 45 minutes.
Blend together cornstarch with 2 tablespoons of water. Take pork chops out of the oven and blend cornstarch into the juice. Bake, uncovered, for 15 minutes. Before serving spoon sauce over fruit and pork chops to glaze.
As you can see from the pictures I didn't end up using a lemon or an orange, we only had a grapefruit in the house, so that's what I used. It probably wasn't the best idea, it didn't taste as well as I'm guessing a lemon would have, but it wasn't too-too bad. We served the pork chops with baked potatoes and a veggie casserole and overall it was a good meal.
